Dish 1: Maklouba
Maklouba or Maqluba means upside down and is a traditional Palestinian dish composed of fried aubergine, onion with tomatoes, spiced rice and meat or chicken. There are alternative ways of its preparation, for instance, some prefer cauliflower instead of aubergine, and others choose to add potato. It can be decorated with nuts as an option.
Dish 2: A traditional Palestinian breakfast
A traditional Palestinian breakfast involves several delicious dishes. Manakeesh is a Middle-Eastern flatbread topped with either za’atar (thyme), dukka and cheese. It is served with hummus (chickpeas) and foul Mudammas (fava beans). Falafel is a deep-fried ball made from soaked chickpeas , broad beans, or a combination of both. It is served with the Gazawi salad placed in a mortar made in Gaza and with a clay from Gaza which gives it a special flavour.
